Soup Blitz! Two soups in an attempt to fill the freezer with quick serve goodness.

So tonight we bring you: Zuccinni Soup and Caramel Pepper Soup.
Both are designed for Ketogenic diets.



Zuccinni Soup                                 Serves 5ish, Very Easy

    * 3 - 4 cups of grated zuccinni
    * 1 grated carrot (mainly for texture, may be omitted or substituted for 6 diced button mushrooms)
    * 2 diced brown onions
    * 1/4 of 1/5 of a cauliflower, chopped   
    * 2 cloves of crushed garlic
    * 1 stalk of leek, well washed and finely chopped
    * 8 sliced spring onions
    * 1/2 cup fresh chopped parsley
    * tablespoon of vegetable stock base, such as "Vegeta"
    * pepper to taste

Throw everything into a large pot, cover contents with water as well as an extra inch of water above vegetable line. Bring to the boil and simmer for 40 minutes. Lightly blend with a hand food processor, leaving some texture to the soup.

For protein requirements, serve with:
    * lightly grilled slices of silken tofu
    * tofu puffs (watch fat content on these ones!)
    * grilled and diced soy slices (like fake bacon)




Caramel Pepper Soup                     Serves 4, Very Easy

This one is a rich, yet delicate, broth and also very delicious. Caramel refers to the colour achieved by the onions and mushrooms.

    * 12 - 16 diced eschallots (sweeter than regular onions)
    * 6 chopped brown onions
    * 15 - 20 button mushrooms - heads peeled and sliced, stalks finely diced
    * 2 litres of water
    * lashings of freshly cracked black pepper
    * 1.5 litres of water.
    * tablespoon of vegetable stock base, such as "Vegeta"

Place everything in a large pot, bring to boil and simmer for 40 minutes. Pepper is essential in making this soup sublime. Don't be afraid to use too much, just keep cracking it into the pot.
Serve with a little fresh parsley and more pepper!

This journal was made to share the recipes that i imagine, alchemically manifest, and bluff my way through!

Namely recipes that are vegetarian, low carbohydrate, no sugar, no starch, and all that other stuff that i am not supposed to eat.

It can be tricky to get inspiration from limited ingredients, vegetable, vegetables and more vegetables, so hopefully this could give readers some ideas - as well as letting me remember good things i have made in the past!
